研究目的：

本研究检测比较健康志愿者饮用甜菜根汁前后的口腔和肠道微生物群变化并评估每日饮用甜菜根汁对健康志愿者口腔和肠道微生物群的影响以及对唾液、血液等生物样本中的硝酸盐、亚硝酸盐含量的影响，研究结果将用于进一步为饮食干预改善人体菌群健康健康提供科学依据。  

Objectives of Study：

This study investigates and compares the changes in the oral and gut microbiota of volunteers before and after consuming beetroot juice, and evaluates the impact of daily beetroot juice intake on their oral and gut microbiota. It further assesses its effects on nitrate (NO₃⁻) and nitrite (NO₂⁻) levels in biological samples such as saliva and blood. The findings will provide scientific evidence for dietary interventions aimed at enhancing microbial health and improving human well-being.

纳入标准：

Inclusion criteria

排除标准：

1.既往被诊断为糖尿病、肝肾疾病或低血压； 2.长期服用益生元/益生菌补充剂（每周超过一次）； 3.长期使用抗生素、抗炎药或免疫抑制剂； 4.孕妇或哺乳期妇女。

Exclusion criteria：

1.Previously diagnosed with diabetes, liver or kidney diseases, or hypotension. 2.Long-term use of prebiotics/probiotic supplements (more than once a week). 3.Long-term use of antibiotics, anti-inflammatory drugs, or immunosuppressants. 4.Pregnant or lactating women.
