研究目的：

辣椒是我国销量最高的一类蔬菜，其维生素含量高且具有多种有益于人体健康的功效，辣椒中含有的主要活性成分为辣椒素(Capsaicin，(E)-N-[(4-hydroxy-3-methoxyphenyl)methyl]-8- methylnon-6-enamide)，辣椒素通过与分布在人体各环境中的神经受体（TRPV1）结合，可以使食用者或者皮肤接触者产生刺激性的感受。在当今社会，饮食早已不只是为了解决温饱问题，辣椒带来的个性化体验受到越来越多人的追捧，并且越来越多的研究发现，适量辣椒素的摄入具有减重，抗氧化，抗炎，抗肿瘤以及缓解动脉粥样硬化等功效。探究饮食剂量的辣椒素摄入对人体糖脂代谢及肠道稳态的影响具有重要意义。临床研究证实，辣椒素对于调节肥胖和糖尿病具有十分显著的疗效，并与人体健康状况息息相关。通过每天摄入定量饮食剂量的辣椒，有助于调节肠道微生态平衡，改善糖脂代谢水平，进而改善身体健康状况。留取您的粪便样品及血液样品，填写基本信息调查表以及膳食结构与生活状况调查表是为了一项科学研究，且本研究已通过江南大学医学伦理委员会的批准。

Objectives of Study：

Capsaicin is one of the most sold vegetables in China. It has high vitamin content and a variety of effects beneficial to human health. The main active ingredient in capsaicin is capsaicin. (E)-N-[(4-hydroxy-3-methoxyphenyl)methyl] -8-methylnon-6-enamide), capsaicin binds to a neuroreceptor (TRPV1) that is distributed throughout the human environment and can cause irritating sensations in users or skin contacts. In today's society, diet has long been more than just to solve the problem of food and clothing, the personalized experience brought by pepper is sought after by more and more people, and more and more studies have found that the intake of capsaicin has the effect of weight reduction, antioxidant, anti-inflammatory, anti-tumor and alleviate atherosclerosis. It is of great significance to investigate the effects of dietary dose of capsaicin on human glucose and lipid metabolism and intestinal homeostasis. Clinical studies have confirmed that capsaicin has a very significant effect on regulating obesity and diabetes, and is closely related to human health. Through daily intake of a quantitative dietary dose of pepper, it helps to regulate intestinal microecological balance, improve the level of glucose and lipid metabolism, and thus improve physical health. Your fecal samples and blood samples, filling out the basic information questionnaire and the dietary structure and living conditions questionnaire are for a scientific study, and this study has been approved by the Medical Ethics Committee of Jiangnan University.

Inclusion criteria

排除标准：

1.患有胃肠道、神经系统、心血管、内分泌、肾脏或其他可能影响肠道动力的慢性疾病； 2.曾经进行过大型腹部手术，尤其是胃肠道手术； 3.两周内使用与消化道病症有关药物的，如抗痉挛药、泻药、抗腹泻药物等对肠道蠕动有影响的药物； 4.妊娠期或哺乳期妇女； 5. 1个月内或长期食用酸奶、益生菌、益生元、合生元、膳食补充剂、中草药，或是服用大剂量的维生素或矿物质； 6. 1个月内或长期使用抗生素，3个月内或长期使用糖皮质激素、免疫抑制药物； 7. 1个月内饮食习惯发生重大改变，如开始食用富含纤维的饮食等（>18 g/day）； 8.经医院诊断患有慢性病、免疫系统疾病、精神病、传染病或重大疾病； 9.酗酒、滥用药物； 10.目前或近期（1个月内）进行其他临床研究； 11.拒绝签署知情同意书，或估计依从性较差，随访可能性差者。

Exclusion criteria：

1. Suffering from chronic diseases of the gastrointestinal tract, nervous system, cardiovascular system, endocrine system, kidneys, or other factors that may affect intestinal motility; 2. Have undergone major abdominal surgery, especially gastrointestinal surgery; 3. Medications related to gastrointestinal disorders, such as anti spasmodic drugs, laxatives, anti diarrheal drugs, etc., that have an impact on intestinal peristalsis, should be used within two weeks; 4. Pregnant or lactating women; 5. Within one month or long-term consumption of yogurt, probiotics, prebiotics, synbiotics, dietary supplements, Chinese herbal medicine, or taking high doses of vitamins or minerals; 6. Within one month or long-term use of antibiotics, within three months or long-term use of glucocorticoids and immunosuppressive drugs; 7. Significant changes in dietary habits within one month, such as starting a fiber rich diet (>18 g/day); 8. Diagnosed by the hospital as suffering from chronic diseases, immune system diseases, mental illnesses, infectious diseases, or major illnesses; 9. Excessive drinking and drug abuse; 10. Conduct other clinical studies currently or in the near future (within one month); 11. Refuse to sign informed consent form, or estimate poor compliance and poor likelihood of follow-up.

数据采集和管理（说明：数据采集和管理由两部分组成，一为病例记录表(Case Record Form, CRF)，二为电子采集和管理系统(Electronic Data Capture, EDC)，如ResMan即为一种基于互联网的EDC：	粪便宏基因组有实验负责人在校园内招募满足要求的志愿者，不限男女，满足BMI及健康要求后，对膳食干预样品进行评价。若能接受，则纳入实验组。干预样品混入提供的餐食中，对志愿者和取样者保持双盲，志愿者每日填写饮食记录表。
Data collection and Management (A standard data collection and management system include a CRF and an electronic data capture：	Fecal metagenomic researchers recruited volunteers on campus who met the requirements, regardless of gender, and evaluated the dietary intervention samples after meeting the BMI and health requirements. If acceptable, they will be included in the experimental group. Intervention samples were mixed into the meals provided, volunteers and samplers were kept double-blind, and volunteers filled out food records daily.
