研究目的:

本研究拟采用棕榈油和胡麻籽油作为油炸用油,研究:(1)人食用油香后,血液中脂质氧化产物(丙二醛,超氧化物歧化酶,反式脂肪酸和微核率)的水平;(2)比较两种油炸用油对人体健康的影响。  

Objectives of Study:

To better understand the effects of taking frying flaxseed oil and palm oil on human health: (1) to determine lipid oxidation products (malondialdehyde (MDA), superoxide dismutase (SOD), trans fatty acids (TFA), and micronucleus rate) in human blood collected from Youxiang consumer; and (2) to investigate the influence of frying oil on human subjects.
