研究目的：

本研究旨在收集人群唾液样本，分析不同多酚食品干预后唾液蛋白组成、沉淀量及润滑性的变化。  

Objectives of Study：

This study will recruit approximately 50 healthy individuals without oral diseases from Nankai University. Saliva collection will be conducted on weekday afternoons between 2:00 PM and 4:00 PM. Prior to collection, project staff will record participants' basic information and administer questionnaires regarding their lifestyle habits, medical history, medication use, and dietary intake. A preliminary oral examination will also be performed to assess hygiene, periodontitis, oral mucosal conditions, and other relevant diseases. Eligible subjects who pass the screening are required to fast for two hours before the collection procedure. They must rinse their mouths with alcohol-free mouthwash and water. Subsequently, unstimulated saliva will be collected twice using sterile saliva collection devices, with a 5-10 minute interval between collections. Details such as collection time and volume will be recorded for each sample. Following collection, the saliva samples will be immediately centrifuged to separate the supernatant. The supernatant will then be aliquoted and stored frozen at -80°C. Subsequent in vitro polyphenol intervention experiments will be performed on the saliva samples. The treated samples will be analyzed for various physicochemical properties, including salivary protein composition, friction coefficient, and the amount of salivary protein precipitate.

纳入标准：

1.年龄18-45岁，性别不限（50名）；
2.身体健康，无口腔疾病；
3.近期未服用影响唾液分泌的药物；
4.同意参与研究并签署知情同意书。

Inclusion criteria

1.Aged 18-45 years, regardless of gender (n=50).
2.In good general health with no oral diseases.
3.Has not recently taken any medication known to affect saliva secretion.
4.Willing to participate in the study and provide written informed consent.

排除标准：

1.较严重系统性疾病患者，如糖尿病、高血压、心血管疾病、血液病、类风湿性关节炎、恶性肿瘤、哮喘、炎症性肠炎、克罗恩病、银屑病等； 2.身体健康，无口腔疾病； 3.患有较严重涎腺疾病者，如干燥综合征、唾液腺肿瘤等； 4.患有其他较严重口腔黏膜疾病者； 5.3个月内服用过免疫调节药，或1个月内服用过抗生素，或1周内对局部病损进行过药物治疗； 6.无法配合唾液收集者；

Exclusion criteria：

1.Patients with significant systemic diseases, such as diabetes, hypertension, cardiovascular diseases, hematological disorders, rheumatoid arthritis, malignant tumors, asthma, inflammatory bowel disease, Crohn's disease, psoriasis, etc.
2.Individuals with poor oral hygiene or moderate to severe periodontitis.
3.Patients with other severe oral mucosal diseases.
4.Use of immunomodulatory drugs within the past 3 months, antibiotics within the past month, or local medicinal treatment of the lesions within the past week.
5.Patients with significant salivary gland disorders, such as Sj?gren's syndrome or salivary gland tumors.
6.Inability to cooperate with the saliva collection procedure.
