研究目的:

a) 评估油炸食品来源常见污染物在人尿中的排泄率:设计定群追踪研究调查并评估丙烯酰胺、多环芳烃、氯丙醇酯等常见油炸食品污染物在人尿中的排泄率,为后续开展油炸食品常见污染物的内暴露评估提供基础数据; b) 探索油炸食品常见污染物的代谢组学图谱:设计定群追踪研究探索丙烯酰胺、多环芳烃、氯丙醇酯等常见油炸食品污染物在人尿中的代谢组学图片,为后续开展油炸食品常见污染物的暴露评估、不良健康效应评估和代谢组学机制探索提供基础数据  

Objectives of Study:

a) Assessing the excretion rate of common contaminants from fried food sources in human urine: A cohort tracking study was designed to investigate and assess the excretion rate of common fried food contaminants such as acrylamide, polycyclic aromatic hydrocarbons (PAHs), and chloropropanol esters (CPEs) in human urine, which will provide the basic data for the subsequent assessment of the internal exposure of common contaminants from fried food; b) Explore the metabolomic profiles of common contaminants in fried foods: to design a cohort tracking study to explore the metabolomic profiles of common fried food contaminants, such as acrylamide, PAHs and chloropropanol esters, in human urine, so as to provide basic data for subsequent exposure assessment, assessment of adverse health effects, and exploration of metabolomic mechanisms of common contaminants in fried foods.
